Wrap cantaloupe melon balls with prosciutto and ripe peach slices with fresh basil as a light appetizer to go with the wine. After your guests arrive, allow them time to have a glass of wine and mingle before starting the cheese-making.
There are all different levels and skills involved with cheese making, but some are very simple and can be made in as fast as 30 minutes. For a fun party, choose a fast method to keep guests interested in the process. Use whole, non-homogenized milk, citric acid and rennet to create delicious fresh mozzarella. You will need kitchen gloves to save your hands, as stretching mozzarella is very hot, and a thermometer to watch the curds temperature.
One gallon of milk makes five to six baseball-size balls of cheese. Remember to double your recipe for extra. Serve warm mozzarella with fresh bread, balsamic glaze and local honey. Make enough cheese to send home guests with a taste for later. Wrap them in plastic wrap and place in a take-home bag with a copy of the recipe handwritten.
