Duck Confit & Rillettes
Charcuterie refers to smoked, cured or cooked meats, all of which are traditional methods of preservation. Duck legs are cooked in duck fat for hours to make our confit, which is then shredded to make rillettes, a cornerstone of any proper charcuterie board. I hesitated trying Confit, until I tried the Duck Magret & Duck Confit "Quack Pack" Sampler from D'Artagnan. I was really impressed. I have also tried the Duck Rillettes, which I pleased I did as well.
